Well, that's a bit of a problem lately, since Gensokyo.org's gallery of translated doujinshi is down. You could always use the torrent they made instead - it has EVERYTHING the gallery had, which includes a real fuckload of fan comics and most of the ZUN ones.
As for the books? Well, sorry, pal, but you're up shit creek with weights on your feet. The most you have is Touhouwiki's attempts at partial translations, which aren't exactly written as a miracle of prose, and in fact get a bit babelfish-y at a couple places, since people with a good domain of both moonspeak and English are really hard to come by. For example, here you can read the attempts at translating Curiosities of Lotus Asia, a book detailing the daily life of half-youkai (and only male with a speaking part in the series) shopkeeper Rinnosuke as many of the other characters pass by his store and either buy stuff from him, mooch stuf from him, or give him headaches.
