As for why they mated with elementals, I think it would simply be a case of elementals being far more fecund than pure humans. The pure humans would be like fantasy elves or deities - long-lived, nigh immortal, and lucky to produce a single child in a century. They mating with elementals became frequent enough that soon the half-humans far outnumbered the pure humans. Once that happened, the remaining pure humans slowly bred into the half-human stock (creating some bloodlines that are quarter-elemental and thus with a predisposition towards some magic) and that was the end of that.

Well, the problem with attempting to pursue True Magic in this day and age is that there are no bodies of knowledge to draw on and no tutors to learn from. It takes something rare, like discovering an ancient Human archive or a tutor from one of the rare surviving lines to pursue True Magic. One of the original contributors of the True Humans theory here. Don't know if it has any weight, but the way I imagined this was as follows:

-True Humans were not meant to be modeled after elves, but rather the gods of the Greek/Norse/Egyptian/Mesopotamian pantheons et al. Although according to the theory it's actually the other way around, and the tales of gods were actually the results of Low Humans encountering True Humans back when they were still around.
-True Humans didn't have a low birth rate. It was up to par with the normal humans of today.
-True Humans had unique genetic traits which enabled them to breed with almost any variant of humanoid beings, including elemental spirits. Thus, instead of producing children which were extremely close to one race or the other, or creating infertile hybrids, the children of these pairings were fertile hybrids which had characteristics of both. Demigods, in a way. Or rather, Demihumans.
-Genetic flexibility bullshit combined with magic made it so that True Human genetics don't follow the dominant/recessive pattern that allows full emergence of dormant True Human characteristics further down the line. At least, such things become impossible once we get past the first couple of generations post-interbreeding. What actually happens is that the Demihumans propagate more of their own kind, with varying degrees of magical ability and elemental attunement. Further interbreeding between the Demihumans eventually resulted in the Low Humans of today.
-Magical ability wanes the further down the line things get, due to dilution of True Human ancestry. Careful pairings and marriages could eventually create a lineage that had greater tendency toward magical power, but can never fully attain the level possessed by a True Human without heavy usage of Magical shenanigans.

Alycar, the city of my birth, but an alien place to me nonetheless. My journeys over the last three weeks have brought me here. I hitchhiked rides from dubious strangers, have had to fend off the occasional fanatic, and even eased an old woman through her final days. It has been an extraordinary experience thus far, but what lies before me will be even more so.

I will meet my mother for the first time in my life.

My first memories are of a sleepy town on the other side of the continent called Garsla, growing up under the care of an old man by the name of Tor. I grew up in a relatively secluded existence, learning the ways of the farmer and the virtues of a simple life. I was a natural at it, becoming good enough to take over the farm once old man Tor died when I was fourteen years old despite the fact that he had kin waiting to take his place. But something in me felt wrong with the arrangement, despite how comfortable I became there. Something was tugging me to go somewhere else, that there was something horribly missing from my life.

That is when I met a merchant who was stopping in town one night.

Exactly what happened depends on who tells the story, but whatever it was, it wiped most of them out, and spread out the few survivors to the far corners of the world. No one really knows who our precursors were, or even what they looked like, but their best guess is that people like me, albinos in any sense of the world, are the most direct descendants that exist today. The people of today, by and large, still have a portion of the "Precursor's Gift", but it's limited due to the fact that the few survivors had to breed with other beings wherever they ended up in order to continue their lineage to any degree.

We've established that the True Humans are...inhumanly efficient at converting a world populated by other intelligent life to one dominated by their offspring. Then it turns into hair and eye color determine magical proclivities. Then there's writefagging. I looked over at Sandra sprawled in the grass next to me, her long blonde hair splayed out behind her, radiant as always. Even in the dimmest light I swear her hair shines, not like my brown mop which could only be described as dull. There's not many blondes in the world now, hundreds of years of mixing genes has left most people different shades of brown. Brown hair, brown eyes, brown skin, but every so often you get a Sandra, a remnant of the past. I still don't know why a one in a million like Sandra would choose someone like me, a million in one, but we've been together for as long as I can remember.

Clouds began to roll in and darken the sky. We laid there for a while longer, willing the clouds to go away, but as the first drops began to fall we knew we'd have to leave the park. Sandra jumped up and pulled me to my feet, she wouldn't let the rain dampen her mood for long. We made our way back to the park subway and began to plan what we could do when we got back to our apartment.

We neared the subway and a number of things happened almost simultaneously. We saw a raven haired girl stumble out of an alley way just before us and into the street. I saw an oncoming car slam on its brakes, but I knew it would be too late. I leaped forward and managed to shove the girl out of the way as the car slid into me. The next few moments were a blur, I saw the raven haired girl crying in a heap on the sidewalk, a lady with the greenest eyes I've ever seen was rushing over from her car, and above me, Sandra was cradling my head weeping. I looked down for a second to see lots of red, but immediately looked back to Sandra.
"It'll be okay," I lied, already feeling blackness at the edges of my vision. The blackness slowly crept to the middle blotting out everything but Sandra's face, when suddenly everything brightened. Sandra was a light, banishing the dark, pulling me towards consciousness. I felt my legs begin to move and we knew there had been a miracle. Sandra had preformed a miracle.

No, it's not no eye colour. It's a literal lack of irises. They still have the genes encoding for specific colours, just no irises to express it. It's like if a person has no skin - it doesn't mean that they don't have a sun/moon attunement, it means they have no fucking skin.
